I've often wondered that, too. But I've never found an answer.

Could speculate, though. Two possible explanations come immediately to mind...

1) Perceptual bias. The light/colors are actually the same (or very similar), but we perceive them as different, because our physiological state is different between morning and evening. Something like the "full moon illusion", where the full moon is actually the same size when on the horizon vs. overhead, but appears (to us) much larger when near the horizon.

A possible argument against this is that the sunrise colors still seem to me somehow more subtle and pastel, even when I'm working nights and sleeping days, so the sunrise occurs at the end of my day rather than at the beginning.

2) There really is a physical difference in the light, and it's caused by the light passing through cold air in the morning vs. warm air at night. Or maybe it's not the air temperature so much as air chemistry: morning light passing through air that has been in the earth's shadow for 6-8 hours overnight, vs. evening light passing through air that has been in sunlight for 6-8 hours during the day.

Anyways... It's a lovely image, and beautiful light, no matter the reason. Thanks for sharing!
